Love love love Daeho. The ownership and service are great and the food is always high quality. Don't just come for the kalbijjim (it's amazing though)! There's a lot to gain from trying naengmyun, traditional beef soup, and all sorts of other beef-based broth menu items! People usually shy away from a meal because of the price of the kalbijjim, but the other items are big, shareable portions starting at around $25. 100% recommend as the best Korean food in Bellevue.
I went to Daeho's soft opening in San Francisco years ago and enjoyed the experience so I was excited to see one open in Bellevue. I just knew it would be crazy popular and the hype wouldn't die anytime soon, or ever, so I went 15 min before they opened to stand in line hoping to get seated before the cut-off. It's surprisingly big inside so everyone in line got seated I believe. I ordered the Cajun KalbiJjim and it was more than enough for the four of us. Service was quick and attentive as well.
Believe. In. The. Hype. I was a loooottttt of skeptical in trying this place bc I have been let down by foodie grams before and the prices were steep. But all in all it's a great establishment. First their system works and makes dining experience enjoyable. You check in to waiting list and they take your pre order so like magic your food is ready for you by the time you sit down bc you probably waited 30+ mins. Now the food..Chefs kiss. I mean the quality in all the things we ordered were just superior quality. *The beef tartare was refreshing and easy on the palate. I loved the nuttiness from the sesame seeds and sweetness from Asian pear, it was a great PEARing LOL. *Spicy squid noodle was light and revitalized my taste buds, it was spicy and a tinge sweet like most Korean dishes containing gochujang. The noodles had a nice chew to it and I loved the squid tentacles they were pretty big. *Seolleong tang or beef bone soup is always a crowd favorite with my group. The rich milk like bone broth is rich and literally like a hug and is so comforting. You can taste the hours of bone simmering. I liked the big pieces of tendon and the generous amounts of beef brisket. *Main event.. KALBIJJIM. From presentation to the scorched cheese and buried noodles and ttebokki everything was just bussin. It is on the sweeter side but is balanced out if you get it spicier and eat it with the pickled onions and Jalepenos so good. The rib pieces were fall off bone and tender. The vegetables wonderfully braised. Many different textures with the glass noodles and tteboki added. All in all a first class experience in my mouth. Worth the visit and wait. But be warned the parking lot is Tetris with teslas.
First time trying kalbijjim and I loved it! Have been wanting to try this place since it opened and am glad they started using an online waitlist. Only difficultly was finding parking since it was pretty crowded on a Friday evening. I like that they take your order before they seat you so that the food comes out a little quicker by the time you're seated. Got the braised short rib with no spice and it was soooo good. The meat was super soft and tender and the sauce was so flavorful. A little pricey in my opinion, but the portion was huge and we had leftovers from splitting one dish between 2 people. 3 other members in my group shared a kalbijjim and nengmyun and were all very full. I would definitely come again!
So far my favorite Daeho location -- I've previously been to the original SF location as well as the San Mateo location. We went during the soft opening, so the service was pretty slow, and we had to wait 30 minutes in line for a weekend lunch just to sign up for the waitlist LOL. In total we probably waited 2-2.5 hours to be seated, so I'd definitely suggest getting there before it opens (or, if they've opened the Yelp waitlist online, use that). The food is delicious, with their signature kalbijjim being really tender, fresh, and flavorful. The portions when I went were bigger than the other Daehos I've been to, which was great!! We also ordered the spicy naengmyun, which has a kick to it despite being cold! Note that parking is pretty limited, you may have to park across the street which is a bit of a walk.
2nd time at Daeho in Seattle. Came around 5pm on a Friday and there was no line out the door compared to when the place first opened. If you tried going then, you know what i am talking about. This could be because their yelp waitlist is up but i did put in a reservation while i was picking up my friend in kirkland so we were able to sit down right away when we got there but the restaurant was packed. Around 6ish, a small line was beginning to form outside and by the time we left, the wait list was about 45 mins. We just ordered the original Kalbijjim and added the rice cakes and got half cheese (full cheese is too much cheese). There was a good amount of meat and vegetables and the portion were huge. Could definitely be shared with 3-4 people. The meat was tender and the vegetables were soft. Delicious. Came with some side wishes as well. Not sure how the other dishes are as i usually get the kalbijjim when i go but there are plenty of people ordering other things so it must be decent. Knocked off a star because it's soo expensive but i guess i can see why. Adding rice cakes and cheese will also cost extra. Plenty of parking space in the lot and seating inside, but it can get full pretty easily. Definitely a treat to come here and since it's so expensive, you prob don't want to come often but the food doesn't disappoint.
Daeho was awesome when I went the first time (albeit with a 2+ hour long wait on a Saturday), and it still hits the spot the second time, though I went on a Thursday afternoon instead. Parking fills up fast but not so much on weeknights. Inside is very casual, and the place does get very loud the more people there are. My group of four did not have to wait too long, and we got seated around 6pm. We ordered a braised beef rib kalbijjim with cheese, and it was very entertaining watching one of the waiters flambé the dish so the cheese world melt! It was oddly sweet and our group wasn't too sure about adding the cheese after the fact, as the whole dish ended up being pretty overwhelming in flavor. I also wished there was more meat but without the extra cost to add it on. We also got a daeho beef suyuk, which somehow tasted like Vietnamese sweet and sour fish soup at one point but was the best part of the meal despite all the excess pepper on the top. It was great having a soup to drink since the kalbijjim was quite heavy in taste. This is a great place to take friends to, though wait times can be long on weekends and parking tough on those same days. I would recommend going on weeknights or even weekdays if you don't want to wait.
The meat makes my heart sing! Super tender and flavorful. Personally, I love how sweet it is but I can see how it's not for everyone. All the cons are non-food related. We came on a Saturday afternoon and required an hour wait. Checkin via Yelp waitlist prior to going. The parking lot is decently sized...but it was jammed packed due to its popularity.
Coming from the Bay, I had already been to Daeho there but was excited to see that they opened a new spot in Bellevue! We came on a weeknight around 8pm and there wasn't really a wait, despite it still being super crowded inside. They take your order as you wait so that the food can be ready quicker once you're seated. My friend and I split the galbijjim and we added the thick glass noodles to it. It comes with a few side dishes, and I did really like the kimchi and fish cakes. Nothing to spectacular. The galbijjim itself came piping hot and along with the short ribs has carrots, radish, potato, and onion mixed in. I absolutely love the sauce and it was as delicious as I remember, with a good smokiness on the bottom as well. Between the two of us we were pretty hungry, and we almost finished the whole thing. For what it is, it's honestly quite pricey especially if you come really hungry and can split it with one other person. The total was over $100 and for a single dinner I feel like it's quite a lot. I would want to try their other popular items next time though, since the soups seem great as well! :)
